Therapy is really tailored to a child's age and stage of speech skills. I try to make therapy engaging for kids by incorporating their interests and/or words that are meaningful/functional for them. We still get lots of practice and learning in, but it is fun!
Parents should be participating in sessions as well as practicing throughout the day. If parents aren't available at the time of sessions, I communicate thoroughly so everyone knows what is happening in therapy and what needs to be done outside of therapy. I always get parent input on words that will be important for the family/child. I explicitly share my methods and teach parents how to work with their child.
I've used a range of AAC methods including American Sign Language, no or low-technology methods like choice boards and pictures, all the way up to high-technology methods like iPad apps and dedicated speech-generating devices. I often use a combination of methods and accept all forms of communication as valid. AAC use is very tailored to each child as well.
